Pumpkin Ice Cream Sandwich

Sugar Cookies: Who doesn’t love a chewy sugar cookie? Event better, pumpkin ice cream sandwiched between two sugar cookies. This really was the perfect fall treat! It is so easy to make and highly recommended!!


Mix the following ingredients together and bake at 375 for 10 minutes



2 ¾ cups of flour

1 teaspoon of baking soda

½ teaspoon of baking powder

1 cup of butter

1 ½ cups of sugar

1 egg

1 teaspoon of vanilla extract

Since Halloween is coming up, we decided to make pumpkin ice cream! The recipe we used is from the Homes & Gardens Pumpkin Recipes magazine. The best part is that this super easy recipe only takes 5 minutes before you need to put it in the freezer. It calls to beat canned pumpkin and pumpkin pie spice into vanilla ice cream to easily make your very own pumpkin ice cream. Since we were in a rush, we didn’t freeze the ice cream for the full four hours after blending it. However the ice cream still tasted great and we definitely recommend that you try this at home!
